I reached out for CMD-Z and nothing happened.

Go to EDIT mode, click UNDO

I don’t know of a VST or Instrument that hogs Cmd Z within a DAW do you? How may times have you Cmd-Z only to delete a track. Happens to me with NI Maschine and Kontakt all the time!
